Courtney earned an Associate of Arts in Liberal Arts, an Associate of Applied Science in Dietetic Technology, and a Bachelor of Science in Nutrition and Dietetics with a Dietetic Internship at LIU. She has been working in healthcare for six years. Her personal health challenges - along with her experience in the food service industry and her observation of how food is prepared - are what initially inspired her to pursue this path. She is passionate about helping others understand that the correct diet can act as a form of medicine, supporting healing from the inside out. She also enjoys showing people that staying healthy doesn’t require following every new fad diet. What really matters is finding a balanced way of eating that works best for your body. In her spare time, she enjoys  spending time witch friends, family and her new baby girl, as well as going for walks and hikes during the warmer months. Courtney spent twelve years in the food service industry, beginning with an ice cream shop before becoming a hostess at a restaurant. She eventually worked her way up to Manager, then to Interim Director of Operations.  During that time, she was exploring her long-term career path, which ultimately led her to pursue and complete a degree in Dietetics.
